Carrot Cake – Easy Homemade

Carrot cake is a classic. I have a great recipe for carrot cake. This is one of my favorite cakes and favorite recipes.

Ingredients:

  • 1 1/2 cup sugar
  • 1 1/2 cup oil
  • 4 eggs
  • 2 cup flour
  • 3 cup grated carrots
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp salt
  • 3/4 cup pecans

Directions:

Cream sugar and oil. Add eggs. Beat until fluffy. Sift dry ingredients together. Add to egg mixture. Add carrots and pecans. Mix well.

Pour into 3 round greased pans.

Bake at 350 for 20 to 25 minutes.

Let cool thoroughly.

Icing:

  • 8oz cream cheese
  • 1/2 stick oleo
  • 2 tsp vanilla

Cream together and add 1# powder sugar.

Apply icing to cake, layering the together.

  1. Today is actually my grandma’s birthday and this is one of her favorite cakes to make. And no matter how much she makes it, I do not get tired of it. But this I why I picked this as the recipe of the day to share.
